Orzo with Zucchini and Feta

Makes 4 Servings, POINTS per serving: 3

1 cup orzo
1 medium zucchini, quartered lengthwise and cut into 1/4" wedges
3/4 cup crumbled feta cheese (try a flavored kind, like garlic and tomato)
2 tablespoons fresh oregano leaves or 2 teaspoons dried
4 teaspoons extra virgin olive oil
salt and pepper to taste

1. Cook the orzo according to package directions. Drain and place in a serving bowl; keep warm.

2. In a medium microwavable casserole, combine the zucchini and 2 tablespoons water; microwave on High 1 minute. Drain and add the pasta, along with the remaining ingredients. Toss gently and serve hot or cold.
