Simple Raspberry Muffins

1 egg, slightly beaten
1/4 cup oil
1/2 cup milk
1 tsp vanilla
1/2 cup sugar
1 1/2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 1/2 cups fresh or frozen raspberries (or blueberries, or combination)

1. Combine egg, oil, milk and vanilla.

2. Combine dry ingredients and add to egg mixture.

3. Fold in berries.

4. Fill greased muffin cups 2/3 full, sprinkle with additional sugar and bake at 400 degrees for 25 minues. Let cool slightly before serving. Makes 1 dozen.
