Raisin Bran Muffins

Makes 1 dozen

3 cups raisin bran cereal
1 1/2 cups milk
1 cup whole-wheat flour
1 cup all-purpose flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
2 large eggs, slightly beaten
1/2 cup packed dark-brown sugar

1. Preheat oven to 400 degrees. Line a 12 standard size muffin tin with foil cups, or lightly grease. In a medium bowl, combine cereal and milk; let stand until softened, about 5 minutes. In a small bowl, whisk together flours, baking powder, cinnamon, and salt.

2. Stir oil, egg, and sugar into cereal mixture. Fold into flour mixture. Divide batter evenly among muffin cups. Bake 20 to 25 minutes, until a knife inserted into the center comes out clean. Store up to 5 days at room temperature in a resealable plastic bag.
