1-2 lbs. fresh chicken tenders
1/2 tsp. salt
1/3 cup yellow cornmeal
1 (1 oz) envelop Ranch dressing mix
2 Tbs. all purpose flour
1 Tbs. paprika
3 Tbs. olive oil
1. Sprinkle salt evenly over chicken tenders. Stir together cornmeal and next 3 ingredients on a plate or shallow dish. Dredge chicken in mixture, coating both sides.
2. Cook, in batches if needed, in hot oil, about 5 minutes each side or until nicely browned and cooked through the middle.
